Craig and I both really like Larabars- especially the Mint Chip Brownie flavor. At $1.50 a bar though, we don’t buy them regularly. Instead, I found a
simple recipe to make them at home. Over the past couple years, I have made a few modifications, including adding almonds for additional protein.
It’s a pretty simple recipe, is no-bake and takes
only 15 minutes to make. The only caveat is that you do need a food processor
(or blender).

The main ingredients: oats, dates, chocolate chips, mint extract and cocoa powder. |
Ingredients:
- 1 1/2 cup pitted medjool dates
- 1 cup rolled outs
- 2 tbsps cocoa powder
- ¼ tsp peppermint extract
- ¼ cup chocolate chips
- ¼ almonds (optional)
Instructions:
- Combine all ingredients in a food processor or blender
- Process until finely ground
- Press “dough” into a pan, forming into rectangle.
- Cut into bars
- Refrigerate > 30 min

This is my first recipe-related post. While I don’t plan on
turning this into a food blog, I thought it would be fun to share healthy recipes
that I have had success with and utilize consistently.
